Healthy Winter Fruit Loaf Recipe


  
January is a time for healthy eating and detoxing, but it can be hard if, like me you have a major sweet tooth for all things naughty. 

One way to keep on track with the January resolutions is to try and keep some healthy snacks handy for when your cravings for sugar strike. This tasty fruit loaf is really quick to whip up and keeps in the fridge for when you fancy a nibble. It is packed with natural goodness and protien to keep your cravings at bay. 

Here's how to make a healthy fruit loaf this winter...




You will need:

280g ground almonds
1tsp ground cinnamon
1tsp baking powder
70g coconut oil
100g honey 
4 eggs
  Squeeze of lemon juice
1 banana (over ripe is best)
120g dried cranberries
 

 How to
 Preheat the oven to 200 degrees celcius.

In a bowl mix the coconut oil and honey together until soft and light, whisk then eggs separately before combining together. 
Peel the banana and mush using a fork. 
Add this to the bowl. 
Add the ground almonds, baking powder, cinnamon and cranberries to the mix and stir using a wooden spoon. When the mixture is thick and gooey add a squeeze of lemon juice to set the baking powder off. 
Pour the mixture into a loaf tin, cover with tin foil and pop into the oven for 40-45 minutes.

Best served warm with a dollop of natural yogurt and a cup of tea, perfect comfort food for a cold winter night.

This loaf keeps around 3-4 days just keep in an airtight container and store in the fridge.
